These spooky Air Fryer Monster Eyeball Meatballs are perfect for Halloween! Juicy inside, cheesy in the middle, and a creepy olive “eye” on top.

Ingredients
  

  • 1 lb ground beef 85/15
  • 1/3 cup breadcrumbs
  • 2 tbsp milk
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 12 mini mozzarella balls
  • 6 black olives sliced
  • Olive oil spray

Method
 

  1. Preheat air fryer to 380°F (193°C).
  2. In a bowl, mix beef, breadcrumbs, milk, egg, garlic powder, onion powder, salt, and pepper.
  3. Shape meat around mozzarella balls and seal tightly.
  4. Press a slice of olive on top of each meatball.
  5. Spray air fryer basket and arrange meatballs in a single layer.
  6. Air fry at 380°F for 10–12 minutes, until cooked through (160°F).
  7. Cool for 2 minutes before serving.

Notes

  • Use turkey for a lighter version.
  • Gluten-free? Sub almond flour for breadcrumbs.
