Mini Gingerbread Cakes (Air Fryer)

These soft and spiced mini gingerbread cakes are festive, easy to make in the air fryer, and ready in under 30 minutes!

Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/3 cup brown sugar
  • 1/3 cup molasses
  • 1/3 cup milk dairy or non-dairy
  • 1/3 cup melted butter or coconut oil
  • 1 egg

Equipment

  • Air fryer

Method
 

  1. Lightly grease silicone molds.
  2. In a bowl, whisk dry ingredients.
  3. In another bowl, whisk wet ingredients.
  4. Combine wet and dry ingredients.
  5. Fill molds 3/4 full.
  6. Air fry at 320°F for 10-12 minutes.
  7. Cool 5 minutes in molds, then remove.
  8. Top with powdered sugar or glaze.

Notes

Swap flour for gluten-free blend if needed. Use almond milk and applesauce for a lighter version. Store leftovers in an airtight container.
