Mediterranean Salmon Packets

An easy, no-mess air fryer salmon recipe with tomatoes, olives, onion, and feta. Bursting with Mediterranean flavor in under 15 minutes!

Ingredients
  

  • 2 salmon fillets 5–6 oz each
  • 1 cup cherry tomatoes halved
  • ¼ cup kalamata olives halved
  • ½ small red onion thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp oregano
  • 2 tbsp crumbled feta cheese
  • Salt and pepper to taste

Equipment

  • Air fryer
  • Parchment paper

Method
 

  1. Cut parchment paper into two 12x16-inch sheets and fold each in half.
  2. On one half of each sheet, place a salmon fillet and top with tomatoes, olives, and onion.
  3. Drizzle with olive oil and lemon juice. Sprinkle with oregano, salt, and pepper.
  4. Fold parchment over and crimp edges to seal.
  5. Air fry packets at 370°F for 10–12 minutes.
  6. Carefully open packets and top with feta before serving.

Notes

Make sure packets are sealed tight and not too full. Adjust cook time slightly for thinner/thicker fillets.
