Ingredients
  

  • 2 cups shredded mixed vegetables zucchini, carrot, broccoli
  • 1/2 cup breadcrumbs
  • 2 eggs
  • 1/2 cup shredded cheese cheddar or mozzarella
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste
  • Cooking spray or oil
  • 1 cup marinara sauce for dip

Method
 

  1. Shred and squeeze vegetables to remove moisture.
  2. Mix veggies with breadcrumbs, eggs, cheese, and spices.
  3. Shape into 1-inch balls or small patties.
  4. Preheat air fryer to 375°F.
  5. Spray basket and bites with oil.
  6. Air fry for 10–12 minutes, flipping halfway.
  7. Warm marinara dip and serve alongside bites.
