Cranberry-Waldorf Chicken Salad Phyllo Shells

Bright, fresh, and crunchy — these chicken salad phyllo cups are perfect for parties, with a creamy-sweet filling and crisp golden shells!

Ingredients
  

  • 15 mini phyllo shells
  • 1 cup cooked chicken chopped
  • 1/3 cup diced apple
  • 1/4 cup chopped celery
  • 1/4 cup dried cranberries
  • 1/4 cup mayonnaise or Greek yogurt
  • Salt & pepper to taste

  • Air fryer

Method
 

  1. Air fry phyllo shells at 350°F for 3 minutes. Cool.
  2. In a bowl, mix chicken, apple, celery, cranberries, mayo, salt & pepper.
  3. Chill mixture if time allows (30 min recommended).
  4. Spoon ~1–2 tsp of filling into each shell.
  5. Serve immediately. Optional garnish with herbs or nuts.

Notes

  • Don’t fill ahead — shells can get soggy.
  • Store salad and shells separately if prepping in advance.
  • Try red grapes, walnuts, or herbs to switch it up.
