Ingredients
  

  • 8 oz goat cheese or half goat, half cream cheese
  • 1/4 cup dried cranberries chopped
  • 1/4 cup pecans toasted and chopped (plus more for coating)
  • 1 tsp honey or maple syrup optional
  • Salt and pepper to taste
  • Optional: 2 tbsp chopped parsley or rosemary for coating

Method
 

  1. Mix goat cheese, cranberries, pecans, honey, salt, and pepper.
  2. Chill mixture for 20–30 minutes.
  3. Combine coating ingredients on a plate.
  4. Roll cheese mixture into 1-inch balls.
  5. Roll each ball in coating.
  6. Chill until ready to serve.

Notes

Use dairy-free cheese if needed. Keep chilled for best shape. Serve with crackers or on skewers.
