Air Fryer Parmesan Zucchini Sticks

Ingredients
  

  • 1 large zucchini or 2 medium, cut into sticks
  • 1 egg beaten
  • 1/2 cup breadcrumbs panko or regular
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • Salt & pepper to taste
  • Cooking spray or oil

Method
 

  1. Preheat air fryer to 375°F.
  2. Cut zucchini into uniform sticks.
  3. Set up dredging stations: egg in one bowl, breadcrumb mix in another.
  4. Dip zucchini in egg, then breadcrumb mix.
  5. Place in air fryer basket, spray lightly with oil.
  6. Air fry 8 minutes at 375°F, flipping halfway.
  7. Serve hot with marinara or your favorite dip.

Notes

  • For low-carb, use almond flour and Parmesan.
  • For gluten-free, use GF breadcrumbs.
  • Freeze prepped sticks; cook from frozen at 375°F for 10–12 minutes.
  • Store leftovers up to 3 days; reheat to crisp.
