Air Fryer Parmesan Polenta Bites

These air fryer Parmesan polenta bites are crispy outside, creamy inside, and ready in minutes. A fun gluten-free appetizer!

Ingredients
  

  • 1 lb cooked polenta homemade or tube, chilled and cubed
  • 1 tbsp olive oil
  • 1/3 cup grated Parmesan cheese
  • Optional: garlic powder Italian herbs
  • Cooking spray
  • Dipping sauce: pesto marinara, or aioli

Method
 

  1. Cut chilled polenta into cubes.
  2. Brush with olive oil on all sides.
  3. Sprinkle with Parmesan and optional seasonings.
  4. Preheat air fryer to 375°F.
  5. Place cubes in a single layer. Air fry 7–8 minutes, flipping halfway.
  6. Serve hot with dipping sauce.

Notes

Use firm, chilled polenta for best texture. Store leftovers in fridge and reheat in air fryer. Use nutritional yeast for a dairy-free version.
