- Cream butter and sugar. Add vanilla.
- Mix in flours and salt until soft dough forms.
- Roll to 1/4 inch and cut cookie shapes; cut centers from half.
- Chill cookies 15 minutes.
- Preheat air fryer to 320°F. Line basket with parchment.
- Air fry 6–8 minutes until lightly golden. Cool.
- Sandwich with raspberry jam. Dust with powdered sugar.
